The Flying Lees

Keeved cider, naturally sparkling, medium sweet.

Longtail’s premium ciders are keeved. This is a traditional method to encourage the bits in the juice to rise to the surface at an early stage of fermentation and gel together (the ‘flying lees’). Without this nutrient sources, wild yeasts ferment the juice more slowly, retaining apples ethers and flavours and residual sweetness. The final stage of fermentation is conducted in the bottle to give natural bottle conditioning and light sparkle.
